Ingredients
- 1 Banana
- 1 Apple
- 50g Sunflower Oil
- 50g Oat Milk
- 60g Soft Brown Sugar
- 1tsp Vanilla Essence
- 1tbsp Ground Flax Seeds (+3tbsp Water)
- 50g Ground Almonds
- 150g Self-Raising Flour
- 2tsp Baking Powder
- 50g Dates
- Flaked Almonds

If you're looking for something comforting to eat for breakfast, look no further than our Breakfast Muffins! They're packed with almonds and fruit, and were a staple in our Goupie Chocolate House. Now you can make them at home!
Method
- Preheat the oven to 180 oC.
- Combine all of the dry ingredients in a bowl (this includes flour, sugar, ground almonds and baking powder).
- Combine the flax seeds and water and put to one side to create a flax egg.
- Grate the apple and mash the banana.
- Whilst mixing, slowly pour in the wet ingredients into the dry (this includes the oil, milk, vanilla and flax egg).
- Add the remaining fruit (this includes the apple, banana and dates) to the mixture and mix until fully combined.
- Spoon the mix into muffin cases (this mix will make between 6 and 7).
- Top the mix with flaked almonds. The more the better!
- Bake for 25-30 minutes, until the muffins have a golden top. You can use a skewer to poke in to the middle of one of the muffins. If it comes out clean then you're good to go!
