Carrot Cake

Who doesn't love a carrot cake? This is our favourite carrot cake recipe, originally made and served in our very own Goupie Chocolate House!

 

To Make The Cake:

Pre-heat the oven to 180oC.

Mix the orange juice and flax seeds in a small bowl.

Add the sugar, oil, carrot, spices and orange zest to a mixing bowl, and mix thoroughly.

Add the flax seed mix and beat.

Slowly add the flour and bicarbonate of soda to the bowl, mixing it into the batter a little at a time.

Pour into a lined cake tin and bake for 50mins, or until a skewer comes out clean.

Beat the cream cheese and icing sugar together.

Once the cake has cooled, top with the cream cheese frosting. We like to decorate ours with Orange Goupie Dips, Discs or Candied Orange Slices.
