Ingredients
- 125g Sunflower Oil
- 125g Soft Light Brown Sugar
- 1tsps Vanilla Essence
- 2 Apples (grated)
- 1 Orange (juice & rind)
- 1/2tsps Nutmeg
- 1tsps Cinnamon
- 100g Raisins
- 180g Orange Goupie (chopped)
- 175g Self-Raising Flour
Method
Hey folks! We couldn't resist doing another Easter recipe, this time something for the adults - a Simnel Cake with a Goupie twist. Our devilishly fruity cake is completely vegan friendly. We've taken the traditional Easter pud, and added chocolate and as much orange zing as we could to create the perfect finale for the family Easter meal. What You Do
Thoroughly mix all ingredients together, starting from the top of the list and working your way down.
Grease a cake tin and pour in the mixture (you may note there are no pictures of the mixture. This is because it slightly resembles sick, don't worry it tastes delicious!).
Bake on 180 oC for an hour (or until a skewer can be poked into the middle and come out clean).
Decorate with marzipan. Do check that your marzipan does not contain eggs if you would like the cake to remain vegan friendly. We used an orange marmalade under our marzipan to compliment the orange in the base.
P.S. Decoration is your choice, the Goupie G is not an essential component..although we do highly recommend you keep it!
