Ingredients
- 100ml Sunflower Oil
- 275g Self-Raising Flour
- 200g Caster Sugar
- 1tsp Baking Powder
- 1 Lemon (zest & juice)
- 150ml Water
- 150g Icing Sugar
Who doesn't love a lemon drizzle cake? It's a classic for a reason!
Method
Combine the sugar and oil together. Add the lemon zest and 1/2 the lemon juice to this mix.
Add the flour, baking powder and water, alternating between a little of each at a time until fully combined.
Pour the mix into a lined baking tin. We like to use a small loaf tin for ours, but any tin will do.
Bake at 200 oC for 30-35 minutes. The cake is done when a skewer can go through the middle, and come out clean.
Leave the cake to rest whilst you mix the remaining lemon juice and icing sugar together.
Poke a few holes into the top of the cake, and drizzle the sugar/lemon mix over the top evenly. Make sure to fill those holes!
