- 160g White Chocolate & Raspberry Goupie
- 200g Cream Cheese (we used violife)
- 90g White Chocolate
- 50g Fresh Raspberries

The perfect summer recipe - White Chocolate & Raspberry Cheesecake! No bake, and super easy to make, an instant crowd pleaser!
Method
- Blitz up the full box of Goupie into crumbs using a food processor.
- Press the crumb into a small cake tin and smooth into a base. We used a 15cm round tin for ours.
- Melt the white chocolate.
- Beat the cream cheese, with a mixer or by hand, and slowly add the white chocolate, beating the whole time. Make sure your white chocolate is not too hot before starting this.
- Add the raspberries and lightly combine them with the mix. The more you mix, the more the raspberries will bleed!
- Pour the mix onto the base and smooth so that it's even across the tin.
- Decorate with more raspberries and leave to set in the fridge.
