  • 1 Banana

  • 1 Apple

  • 50g Sunflower Oil

  • 50g Oat Milk

  • 60g Soft Brown Sugar

  • 1tsp Vanilla Essence

  • 1tbsp Ground Flax Seeds (+3tbsp Water)

  • 50g Ground Almonds

  • 150g Self-Raising Flour

  • 2tsp Baking Powder

  • 50g Dates

  • Flaked Almonds

If you're looking for something comforting to eat for breakfast, look no further than our Breakfast Muffins! They're packed with almonds and fruit, and were a staple in our Goupie Chocolate House. Now you can make them at home!


  1. Preheat the oven to 180 oC.
  2. Combine all of the dry ingredients in a bowl (this includes flour, sugar, ground almonds and baking powder).
  3. Combine the flax seeds and water and put to one side to create a flax egg.
  4. Grate the apple and mash the banana.
  5. Whilst mixing, slowly pour in the wet ingredients into the dry (this includes the oil, milk, vanilla and flax egg).
  6. Add the remaining fruit (this includes the apple, banana and dates) to the mixture and mix until fully combined.
  7. Spoon the mix into muffin cases (this mix will make between 6 and 7).
  8. Top the mix with flaked almonds. The more the better!
  9. Bake for 25-30 minutes, until the muffins have a golden top. You can use a skewer to poke in to the middle of one of the muffins. If it comes out clean then you're good to go!
