Chocolate Vegan Cheesecake Recipe
- 80g Original Goupie
- 200g Chocolate (55%)
- 400g Coconut Cream (the thicker the better)
- 1tsps Lemon Juice
- 1tsps Vanilla Essence
What You Do
Blitz the Goupie in a food processor and press it into the bottom of a cake tin to make the base. Use the back of a spoon to smooth over and press the mix into the corners.
Melt the chocolate and beat thoroughly with the rest of the ingredients.
Pour the mixture over the base and refrigerate for several hours.

Goupie Tip: Look for a coconut milk with a fat content above 20% for best results! To ensure that your cheesecake is vegan, make sure to check that your chocolate is dairy free as some dark chocolate contains milk.
