  • 200g Gluten Free Flour

  • 100g Dairy Free Margarine

  • 1tsps Xanthe Gum

  • 1/2tsps Salt

  • Water

  • 180g 1 Box Of Taste Of Christmas Goupie

  • 2tbsps Cashew Butter

  • Sunflower Oil

  • Golden Caster Sugar

  • Icing sugar

Who’s feeling festive?! We are! So we’ve been baking away like happy little elves to bring you some extra special minced pies. Ok, so they don’t really have any minced meat in them..but they do have deliciously Christmas spiced chocolate Goupie full of festive fruits and nuts! Not to mention they’re completely gluten-free, dairy-free and vegan friendly, making sure no-one misses out this Christmas! Season’s greetings Goupie Groupies!


What You Do:

Add the margarine and flour into a bowl and rub together with the tips of your fingers to create a breadcrumb texture. Add the Xanthe gum and salt before adding the water bit by bit to form a dough. Refrigerate the dough for half an hour.

Roll out the dough to about ½ cm thickness. Cut out 12 circles with a large cookie cutter and press into the bottom of a cupcake tin.

Blitz up the goupie into small pieces and mix with the cashew butter. Add a heaped teaspoon of the mixture into each pie.

Cut a top for each of your pies in the shape of your choice (this can be a star, heart or fully covered for example) and top your pies.

Brush the tops lightly with sunflower oil and then sprinkle golden caster sugar on top.

Bake for 20mins on 200 oC or until golden brown. Dust with icing sugar to serve.
