- 300g Flour
- 300g Caster Sugar
- 2tsps Baking Powder
- 1/2 tsps Salt
- 2tbsps Chia Seeds
- 8tbsps Water
- 100ml Plant Milk
- 100ml Sunflower Oil
- 1/2tsps Lavender Extract
- 1/2tsps Vanilla Extract
- 5 units White Lavender Goupie
- 125g Margarine
- 200g Icing Sugar
- Food Colouring Optional
Preheat the oven to 175C.
In a small bowl mix chia seeds with water and set aside.
In a large bowl mix together, flour, sugar, baking powder, salt and vanilla powder.
Add milk, oil, lavender extract and chia seed mixture to the large bowl.
Mix well to combine.
Chop five Goupie pieces into smaller pieces.
Add them to the batter.
Add the batter to 18 greased muffin moulds.
Fill them 3/4 of the way.
Bake in the oven for 20 minutes.
Let the cupcakes cool completely.
To make the frosting; add butter, powdered sugar and food colouring to a large bowl.
Mix with an electric hand mixer until light and fluffy.
Add frosting to a piping bag and pipe the cupcakes.
Top with sprinkles.
