Orange & Cardamom Biscotti

Ingredients

  • 180g Caster Sugar

  • 80ml Plant-Based Milk (we use oat)

  • 2tbsp Sunflower Oil

  • 1tsp Soy Protein

  • 1 Orange (zest)

  • 1tsp Vanilla Extract

  • 275g Plain Flour

  • 1tsp Baking Powder

  • 75g Whole Almonds

  • 80g White Chocolate & Cardamom Goupie

Who doesn't love a good biscotti with a coffee? Now you can make your own at home, with our easy recipe!

Method

  1. Preheat the oven to 180 oC.
  2. Mix together the sugar, milk, sunflower oil, orange zest, soy powder and vanilla in a bowl until fully combined.
  3. Sieve the flour and baking powder into the wet mix, and combine into a dough.
  4. Roughly chop the Goupie before adding that, and the almonds to the dough.
  5. Split the dough into two pieces and shape each half into a log shape.
  6. Place the logs onto a lined baking tray, with plenty of space between each. Use you hands to slightly flatten the rolls and smooth the edges to make the classic biscotti shape.
  7. Bake for 35 minutes until they are light brown in colour. Remove from the oven and turn the temperature down to 140 oC.
  8. Using a sharp knife (we find a bread knife works best) cut the rolls into individual biscotti, around 1cm thick each. This part can be a little crumbly, but be patient, you'll get there!
  9. Put the pieces back onto the baking tray and bake for a further 15 minutes, turning them halfway through.
