What We Do
Separate the eggs. Beat the egg yolks with sugar and vanilla essence.
Beat the egg whites until soft peaks form and then fold in egg mixture.
Sieve in flour and xanthe gum, folding as you go.
Line a baking tray with baking paper. Pour mixture onto baking paper and smoother over to create a wide rectangle, about 1cm thick.
Bake on 180 oC for 10-15 minutes until the cake is sightly browned and soft to touch.
Roll the cake with the baking paper still in place into a tight log shape and leave to cool.
Zest the lemon and orange. Mix this with the mascarpone and cranberries thoroughly.
Once the cake is cooled, carefully unroll and spread the mascarpone mixture generously covering one side entirely.
Break up the Goupie into small chunks and spread over the mascarpone.
Re-roll the cake to make a tight swirl. You can either leave the roll as one long log, or cut the end diagonally to make a branch.
Cover your log with vanilla icing and use a fork to decorate. Serve!
