Love is in the air and Goupie is feeling it all over! Celebrating our sauciest flavour, we've developed an adorable little recipe for you to share with your loved ones. Just like Cherry & Almond, its gluten-free, vegan friendly and devilishly tempting! Somewhere in-between a rock-cake and a cupcake these delectable treats tick all the boxes.
What You Do
Cream the margarine and sugar together. Add vanilla and chia eggs and beat thoroughly.
Combine the rest of the ingredients (salt, baking powder, ground almonds) with the wet mix, add more water if the mixture appears too dry.
Chop up the Goupie into small chips and mix into the batter.
Spoon mixture into cupcake cases (this mix should make around 10 cupcakes).
Bake for around 20 minutes on 170 oC. Leave to cool.
To make the frosting, combine the margarine, icing sugar and maraschino juice.
Ice your cakes and top with a cherry. Enjoy!
