White Chocolate & Raspberry Cheesecake

  • 160g White Chocolate & Raspberry Goupie

  • 200g Cream Cheese (we used violife)

  • 90g White Chocolate

  • 50g Fresh Raspberries

The perfect summer recipe - White Chocolate & Raspberry Cheesecake! No bake, and super easy to make, an instant crowd pleaser!

Method

  1. Blitz up the full box of Goupie into crumbs using a food processor.
  2. Press the crumb into a small cake tin and smooth into a base. We used a 15cm round tin for ours.
  3. Melt the white chocolate.
  4. Beat the cream cheese, with a mixer or by hand, and slowly add the white chocolate, beating the whole time. Make sure your white chocolate is not too hot before starting this.
  5. Add the raspberries and lightly combine them with the mix. The more you mix, the more the raspberries will bleed!
  6. Pour the mix onto the base and smooth so that it's even across the tin.
  7. Decorate with more raspberries and leave to set in the fridge.
